Add sugar and the banana to a bowl and mash it together untill it is well incorporated
Pour the milk of your choice as well as the vanilla essence, baking powder, salt,cinnamon and give it a good stir
Add the flour and mix everything together untill you get a smooth batter (its okay to have little clumps of banana in it). You can add a little more milk if you feel the pancake batter is more on the dry side.
Heat a frying pan over medium heat. Add a little oil (the more oil you add, the more crispy the pancake will be), pour the batter, wait until bubbles come on top then flip it, wait till the other side is done and you're done!
After you plate it, add your maple syrup and bluberries or any other toppings.
