Try this quick easy fluffy vegan banana pancakes recipe that’s made with oat flour, it’s super healthy and you wouldn’t even be able to tell the difference between this and regular pancakes! Plus it takes max 15 minutes to make!

How to make oat flour
Oat flour is super easy to make! All you have to do is blend normal oats in the blender until it becomes like a flour consistency!
The Milk:
The great thing about pancakes is that no matter what milk you use, it still comes out tasting totally great! For this recipe I used almond milk but there have been times when I only used just water and it tasted bomb!
The Toppings:
I went really basic with the toppings and only added maple syrup and blueberries but you can go nuts with it! The toppings for pancakes are endless, you can add Nutella, mixed fruits, nuts, ice cream, yogurt, and a million other things!
The Recipe:

Fluffy Vegan Banana Pancakes
Ingredients
- 1 cup oat flour
- 1/2 tsp baking powder
- 2 tbsp sugar
- 1 banana
- 1 tbsp cinnamon optional
- 1 1/4 cup milk (I used almond milk)
- 1 cap Vanilla essence optional
- a pinch of salt
Instructions
- Add sugar and the banana to a bowl and mash it together untill it is well incorporated
- Pour the milk of your choice as well as the vanilla essence, baking powder, salt, cinnamon and give it a good stir
- Add the flour and mix everything together untill you get a smooth batter (its okay to have little clumps of banana in it). You can add a little more milk if you feel the pancake batter is more on the dry side.
- Heat a frying pan over medium heat. Add a little oil (the more oil you add, the more crispy the pancake will be), pour the batter, wait until bubbles come on top then flip it, wait till the other side is done and you're done!
- After you plate it, add your maple syrup and bluberries or any other toppings.
